Quality Management for Food and Beverage Manufacturing

Food and beverage manufacturers in South Africa operate under close scrutiny from retailers, export markets, and regulators such as the NRCS, yet quality teams often manage hygiene, traceability, and specification compliance with scattered paperwork. This course covers practical quality management for food and beverage operations, including allergen control, batch traceability, supplier specifications, and customer complaint handling, tailored to local plant conditions and retailer requirements.

What you will be able to do

  • Explain the food safety and quality expectations of major South African retailers.
  • Design a batch traceability system that can trace product from raw material to dispatch.
  • Apply allergen control practices across changeover, labelling, and cleaning procedures.
  • Develop supplier specifications that reduce incoming raw material variability.
  • Investigate customer complaints and link findings back to process controls.
  • Build a quality documentation system suited to a food or beverage production environment.
